Partant sur des bases classiques pour les amener dans la modernité, il aime travailler les produits, aussi bien de la mer que de la terre, que l’on ne trouve pas sur toutes les tables comme l’ail de raie, le pigeon, les escargots ou encore les cuisses de grenouille, et mêler les saveurs d’ici et d’ailleurs, associant gibier ou poisson et cacao par exemple.
Il joue sans en abuser des contrastes chaud-froid, sucré-salé. Sa cuisine gourmande privilégie les produits de saison de grande qualité fournis en priorité par les producteurs de la région.
Sa phrase préférée : “Donner du plaisir” prend tout son sens dans ses élégantes assiettes que l’on commence par dévorer des yeux avant de surprendre et régaler nos papilles.
